Healthy-Ish Lemon Muffins GF || DF opt.

Lemon muffins are a great way to start the day! These are so fresh and moist! We call them "healthy-ish" because your icing choice will determine if they are healthy or healthy...ish. As you can see, we could not resist the Blueberry Cream Cheese Glaze. Warning this is the messier alternative, but it's so yummy.

Yields: 24


1 cup GF all-purpose flour

1/2 cup GF almond flour

1/2 cup GF tapioca flour

1 tsp baking powder

1 tsp of baking soda

1/2 tsp salt

*1 tsp xanthan gum (if all-purpose flour doesn't include this)

1/2 cup agave (honey)

4 TBSP melted butter (non-dairy alternative, or coconut oil)

2 eggs

1/2 cup plain greek yogurt (non-fat or full fat both work)

1 tsp vanilla

2 TBSP lemon juice

zest from 1 lemon (about 1/5-2 TBSP

Standard Lemon Glaze

1 cup powdered sugar

1 tsp coconut milk (or milk styled product)

1 tsp lemon juice

1 tsp vanilla

Blueberry Cream Cheese Glaze (pictured)

3 TSBP butter, room temperature (or Earth Balance vegan butter)

4 TBSP cream cheese, softened

1 cup powdered sugar

1 tsp vanilla

1/2 cup of blueberries, frozen


  1. Preheat oven to 350 degrees. Place muffin liners in muffin tin and set aside.

  2. In a standing-mixer, mix flours, baking powder, baking soda, (optional xanthan gum) and salt. Combine well.

  3. In another small bowl add agave nectar, melted butter, eggs, greek yogurt, vanilla, lemon juice and zest. Whisk to combine.

  4. Slowly add the wet ingredients to the dry ingredients and mix until thoroughly combined. (Do not exceed beating 2 minutes on a mixer.)

  5. Spoon the batter into the lined muffin tin.

  6. Bake for 12 - 15 minutes, or until golden brown. (Great Test: Insert a toothpick into the center, and remove once it comes out clean.

  7. Remove from the oven and allow to cool for 5 minutes. Then remove onto a wire rack to continue cooling.

  8. Be sure to let them cool thoroughly, or they will not come out of the muffin liners.

Meanwhile....Standard Lemon Glaze

  1. Combine all the ingredients in a small bowl and stir to combine.

  2. Drizzle over the muffins

....or Blueberry Cream Cheese Glaze

  1. Place frozen blueberries in a microwave-able bowl and heat for 30-60 seconds. (you want them to be slightly popped)

  2. Meanwhile, in a standing miser cream butter, cream cheese, powdered sugar and vanilla until smooth.

  3. Add the warmed blueberries and combine until smooth.

  4. Drizzle over the muffins
