EASY Snickerdoodle Cookies

Happy Birthday TMGF Productions! We can't believe it's been ONE year since we started our adventure! Thank you to all that have journeyed with us! We are celebrating by sharing an EASY recipe that is such a crowd pleaser.  




1 box gluten-free yellow cake mix 

1/4 cup butter (softened, not melted) OR dairy-free 1/4 cup oil

2 large eggs

1 TBSP cinnamon


Rolling Ingredients

3 TBSP cinnamon

2 TBSP sugar


Optional Cream Cheese Icing (Recipe Below)



Preheat oven to 375 degrees F.  


Mix all ingredients together in a large stand mixer until well combined. We prefer to use the whisk attachment until it starts to thicken, and we switch to the coated flat beater. It should get to the consistency of cookie dough.


Mix the cinnamon & sugar together. Shape the cookie dough into 1 inch pieces & roll into cinnamon sugar.  Place the dough in the freezer for 5 minutes.  Place 2 inches apart on a greased cookie sheet. Bake for 9-10 minutes.






Optional Cream Cheese Icing



5 tablespoons butter, room temperature

5 tablespoons softened cream cheese, room temperature

3/4 cup powdered sugar

1 teaspoon vanilla

2 to 4 tablespoons milk or water (optional)



In a large stand mixer, whisk all ingredients until well combined. Ice cookies. 

Store in refrigerator.
