It's fall, where caramel apple and pumpkin pies are beginning to fill rooms with their sweet aroma! We love popping one of these delicious apple-cinnamon muffins into our mouths in the morning!
This is a fantastic, basic recipe! Feel free to sprinkle brown sugar, cinnamon and white sugar on the top before you bake them for a sweeter taste!!
1 1/2 cup gluten-free all-purpose flour
3/4 cup sugar
1/2 tsp salt
1 tsp baking powder
1 tsp xanthan gum
1/2 tsp baking soda
1 tsp cinnamon
1/4 cup oil or butter
1/3 cup milk (coconut milk)
1 tsp vanilla
1 medium apples (peeled & chopped)
Preheat oven to 400 degrees F. Grease muffin cups or line with paper muffins.
In a medium bowl, mix all dry ingredients. In a large stand-in mixer, beat wet ingredients until smooth. Gradually blend in the flour mixture. Fold in the apple mixture. Spoon batter into prepared muffin cups.
Bake 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan.
